Long days and strawberry lemonade

Hello, lovely friends! Is everyone doing okay?

I’m still going to try to make more coloring pages to post here, but in the meantime I thought I’d do something a bit different in hopes of adding a bit of joy to your day. See below for a recipe I’d written up over the weekend - it’s a bit more of an…infused water type thing instead of your classic lemonade, because juicing lemons is pretty tedious and I wanted to use a smaller quantity of ingredients. If you don’t have or like lemons, any citrus fruit works just as well (grapefruit would be so nice!). Whether you’d social distancing by yourself or you’re with family, it’s something simple you can do as either a kindness for yourself or a fun activity with your loved ones. maybe open a window or step out onto the porch to enjoy and breathe deep.

You will need:

  • A tall pitcher

  • 5 cups of water

  • 1-2 lemons

  • A few springs of thyme (optional)

  • 5-7 tbs. of honey (local is best)

  • 2 cups of berries, fresh or frozen. Strawberries and blueberries tend to work best, as raspberries break down into a pulp instead of remaining whole (it tastes fine, just isn’t as pretty)

Instructions:

  • Bring 2 cups of the water to a boil (or high simmer is fine) in a small sauce pan.

  • Stir in the honey until dissolved, then add the berries (if you’re using strawberries, slice them in half to release flavor better) as well as a few thyme sprigs if you’d like.

  • Remove the pan from the heat and let sit.

  • Meanwhile, add the remaining 3 cups of water to a tall pitcher along with 1-2 lemons (sliced).

  • Add in the berry mixture (you can strain out the fruit if you’d like, I just left it) and mix to combine.

  • Let cool in the fridge, then it’s ready to serve - enjoy!
